recipes: hawaiian chicken
Like I promised, here is the recipe for the Hawaiian Chicken I cooked the other night with Drew. It was really yummy. I got this recipe from my mom and love it because of the combination of sweet, tangy, and a little bit of spicy. I also love pineapple. YUM.
INGREDIENTS
- 2 lbs. chicken breasts
- 1/3 cup pineapple juice
- 1 tbsp Heinz 57 sauce (we like the barbecue)
- 1 can (8oz) sliced pineapple
- Salt & Pepper (or some of Drew's and my secret ingredient - Slap Ya' Mama! No, seriously. It's an awesome substitute for pepper and it's got a little tang to it)
- 2 tbsp honey
INSTRUCTIONS
- Place chicken in baking dish (12x7 or 9x13)
- Season with salt & pepper (or some awesome SLAP YA' MAMA)
- Bake in 400 degree oven for 30 minutes
- Meanwhile, drain pineapple; reserving 2 tbsps of the pineapple juice
- Combine the pineapple juice, Heinz 57 sauce, and honey
- After the 30 minutes is over, take chicken out and pour honey mixture over the chicken.
- Bake an additional 25 minutes, basting occasionally.
- After that time is up, arrange the pineapple slices over the chicken and bake for 10 more minutes. (I know.. a lot of taking chicken in and out of the oven. It's okay.)
- Drain excess fat from sauce.
- Spoon sauce over chicken when serving. *Side Note: This is REALLY good served over rice.
