recipes: chicken chow mein
I love chicken casseroles. Especially ones with lots of veggies that are easy to prep! This recipe is one I grew up with that I love, because it is really easy to add in more veggies if you like. I love the crunchy celery and chow mein noodles combined with the smooth creamy cheese and chicken. Mmm mmm good! :)
INGREDIENTS
- 1 onion (we love red onions!)
- 1 1/2 cups of chopped celery
- 1-2 tbsp butter
- 4 boneless chicken breasts
- 1 can of chow mein noodles
- 2 cups of shredded cheddar cheese
- 1 can of cream of chicken
- 1/4 cup of light mayo (or substitute with sour cream)
INSTRUCTIONS
- Cut up the onion and celery.
- On the stove, saute the onions, butter, and celery for 5 minutes. Set aside in a bowl.
- Cut up the chicken into bit-size pieces.
- Cook chicken and then add to bowl.
- Add in cream of chicken and mayo. Stir until blended.
- Pour mixture into a 9x13" pan.
- Sprinkle cheese and noodles on top.
- Bake at 350 for 30-40 minutes.
