recipes: chicken chow mein




I love chicken casseroles. Especially ones with lots of veggies that are easy to prep! This recipe is one I grew up with that I love, because it is really easy to add in more veggies if you like. I love the crunchy celery and chow mein noodles combined with the smooth creamy cheese and chicken. Mmm mmm good! :) 

 INGREDIENTS 

  • 1 onion (we love red onions!)
  • 1 1/2 cups of chopped celery
  • 1-2 tbsp butter
  • 4 boneless chicken breasts
  • 1 can of chow mein noodles
  • 2 cups of shredded cheddar cheese
  • 1 can of cream of chicken
  • 1/4 cup of light mayo (or substitute with sour cream)



 INSTRUCTIONS 

  1. Cut up the onion and celery.
  2. On the stove, saute the onions, butter, and celery for 5 minutes. Set aside in a bowl.
  3. Cut up the chicken into bit-size pieces. 
  4. Cook chicken and then add to bowl.
  5. Add in cream of chicken and mayo. Stir until blended.
  6. Pour mixture into a 9x13" pan.
  7. Sprinkle cheese and noodles on top.
  8. Bake at 350 for 30-40 minutes.
